Owner, Kashkan Restaurant
Chef Ranveer Brar, a recipient of the prestigious Divya Chakra, stands as a revered figure in India’s culinary landscape. With a career spanning three decades, he has become a celebrated icon, leaving an indelible mark on the country’s gastronomic scene. A MasterChef India judge, accomplished author, and acclaimed television personality, his influence extends far and wide, significantly impacting Indian cuisine on a global scale.
His journey began at the Taj Mahal Hotel after completing his education at IHM. An ambitious and driven culinary enthusiast, Brar quickly ascended to the position of the youngest Executive Chef in India at the remarkable age of 25. This accomplishment heralded the commencement of an extraordinary career, marked by significant milestones such as launching “Morisco,” “il Camino,” and “Fishtail” at Fort Aguada Beach Resort in Goa. Later in his journey, he attained global recognition with the celebrated “Banq” in Boston, Massachusetts, acclaimed as the Best New Restaurant worldwide by “Wallpaper” magazine.
Brar’s culinary voyage continued as Corporate Chef for the One World Hospitality Group in Boston and later as Senior Executive Chef at Novotel, Juhu Beach, Mumbai. His foray into restaurant consultancy and menu curation expanded, contributing to the launch of MTV India chain of restaurants and the creation of an ‘artisan’ line of meal kits and a premium patisserie, “English Vinglish.”
Global Culinary Odyssey: Chef Ranveer Brar’s Epicurean Ventures
His ventures spanned across continents, with the launch of restaurants like FLYP @ MTV in Delhi, Chandigarh, and Mumbai, the TAG Gourmart Kitchen in Mumbai, and Mayura in Canada. Brar’s association with Alila Hotels and Resorts for F&B conceptualization and collaboration with Royal Caribbean International for Indian gourmet food on cruise liners showcased his versatility and vision.
In 2023, Chef Brar unveiled Kashkan in Dubai Festival City Mall, his first venture in the Middle East. This pan-Indian restaurant aims to encapsulate the diverse flavours from Kashmir to Kanyakumari, symbolising the vastness of Indian cuisine. While acknowledging the impossibility of encapsulating the entirety of Indian culinary diversity in one restaurant, Brar intends to ignite meaningful conversations about the rich tapestry of Indian food.
Chef Brar’s dedication to the culinary world extends beyond the kitchen, as he mentors universities, endorses food brands, and conducts culinary workshops across the globe. His continuous efforts to revive forgotten grains, dishes, and their stories reflect his passion for preserving culinary heritage.
Chef Ranveer Brar’s journey has been an odyssey of flavours, experiences, and a relentless pursuit of showcasing the depth and richness of Indian cuisine to the world.
